  • 1 cup mashed potatoes
  • 1 cup gluten-free flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup milk (or dairy-free alternative)
  • 2 tablespoons butter (or dairy-free alternative)

Instructions

  1. Grate the raw potatoes and place them in a clean cloth to remove excess moisture.
  2. In a bowl, combine the grated potatoes, mashed potatoes, gluten-free flour, baking powder, salt, and pepper.
  3. Add the milk and mix until a dough forms.
  4. Heat a skillet over medium heat and melt the butter.
  5. Form the potato mixture into small pancakes and cook in the skillet for about 4-5 minutes on each side, or until golden brown.
