A delicious and healthy dinner idea featuring sweet potatoes stuffed with spicy hot honey beef.

Ingredients

  • 2 large sweet potatoes
  • 1 lb ground beef
  • 1/4 cup hot honey
  • 1/2 cup cottage cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
  3. In a skillet, cook the ground beef over medium heat until browned.
  4. Add garlic powder, onion powder, salt, pepper, and hot honey to the beef, stirring to combine.
  5. Once the sweet potatoes are cooked, cut them in half and scoop out some of the flesh.
  6. Mix the scooped sweet potato flesh with cottage cheese and then fill the sweet potato halves with the hot honey beef mixture.
  7. Garnish with chopped green onions and serve warm.
