A delicious and healthy meal featuring grilled chicken marinated in honey and lime, served over a bed of fresh vegetables and rice.

Ingredients

  • 1 lb chicken breast
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup bell peppers, sliced
  • 1 cup corn
  • 1 avocado, sliced
  • Cilantro for garnish

Instructions

  1. In a bowl, mix honey, lime juice, olive oil, garlic powder, salt, and pepper.
  2. Marinate the chicken in the honey lime mixture for at least 30 minutes.
  3. Grill the chicken over medium heat for 6-7 minutes on each side or until fully cooked.
  4. While the chicken is cooking, prepare the rice and vegetables.
  5. Once the chicken is cooked, slice it into strips.
  6. Assemble the bowls by placing rice at the bottom, followed by grilled chicken, bell peppers, corn, and avocado.
  7. Garnish with cilantro and serve immediately.
