A delicious and healthy twist on traditional au gratin, using spaghetti squash for a gluten-free option.

Ingredients

  • 1 medium spaghetti squash
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup milk (or dairy-free alternative)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet and bake for 30-40 minutes until tender.
  4. Once cooked, scrape the flesh with a fork to create spaghetti-like strands.
  5. In a mixing bowl, combine the spaghetti squash strands, shredded cheese, milk, Parmesan cheese, butter, garlic powder, salt, and pepper.
  6. Transfer the mixture to a greased baking dish and spread evenly.
  7. Bake for an additional 20-25 minutes until the top is golden and bubbly.
  8. Garnish with fresh herbs if desired and serve warm.
