A delicious and healthy skillet dish featuring ground turkey and zucchini, perfect for a spring dinner.

Ingredients

  • 1 lb ground turkey
  • 2 medium zucchinis, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add ground turkey, cook until browned.
  4. Stir in diced zucchini and bell pepper, cook for about 5 minutes.
  5. Add chickpeas, Italian seasoning, salt, and pepper, stir well.
  6. Cook for an additional 5-7 minutes until vegetables are tender.
  7. Serve warm and enjoy!
