A delicious and healthy casserole made with ground turkey and quinoa, perfect for a gluten-free diet.

Ingredients

  • 1 lb ground turkey
  • 1 cup quinoa, rinsed
  • 2 cups chicken broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground turkey over medium heat until browned.
  3. Add the onion, bell pepper, and garlic to the skillet and sauté until softened.
  4. Stir in the quinoa, chicken broth, black beans, corn, cumin, chili powder, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  6. Transfer the mixture to a greased casserole dish and top with cheese if using.
  7. Bake in the preheated oven for 25-30 minutes, or until the quinoa is cooked and the cheese is melted.
  8. Let it cool for a few minutes before serving.

Notes

  • Feel free to add other vegetables like zucchini or spinach.
  • This dish can be made ahead of time and reheated.
  • For a spicier version, add jalapeños or hot sauce.
