- 1 lb ground turkey
- 1 cup quinoa, rinsed
- 2 cups chicken broth
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground turkey over medium heat until browned.
- Add the onion, bell pepper, and garlic to the skillet and sauté until softened.
- Stir in the quinoa, chicken broth, black beans, corn, cumin, chili powder, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
- Transfer the mixture to a greased casserole dish and top with cheese if using.
- Bake in the preheated oven for 25-30 minutes, or until the quinoa is cooked and the cheese is melted.
- Let it cool for a few minutes before serving.
