  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup boiling water
  • 1 cup shredded coconut
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together the gluten free flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, and mix until just combined.
  6. Stir in the boiling water until the batter is smooth.
  7. Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cupcakes cool completely before frosting.
  10. For the frosting, combine coconut, pecans, and a caramel-like mixture until thickened, then spread over the cooled cupcakes.
