  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together the eggs, ricotta cheese, Parmesan cheese, salt, and pepper until well combined.
  3. In a skillet, heat olive oil over medium heat and sauté the chopped spinach until wilted.
  4. Layer the sautéed spinach in a greased baking dish, then pour the egg mixture over the top.
