- Preheat your oven to 375°F (190°C).
- In a bowl, whisk together the eggs, ricotta cheese, Parmesan cheese, salt, and pepper until well combined.
- In a skillet, heat olive oil over medium heat and sauté the chopped spinach until wilted.
- Layer the sautéed spinach in a greased baking dish, then pour the egg mixture over the top.
- Bake in the preheated oven for 25-30 minutes, or until the eggs are set and lightly golden on top.
- Remove from the oven and let cool slightly before slicing.
- Garnish with fresh herbs if desired and serve warm.
