  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tablespoons coconut oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 can (14 oz) coconut milk
  • 1 cup tomato puree
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat coconut oil in a large skillet over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in garlic and ginger, cooking for another minute.
  4. Add chicken pieces and cook until browned.
  5. Mix in garam masala, turmeric, and cumin, stirring well.
  6. Pour in coconut milk and tomato puree, and bring to a simmer.
  7. Reduce heat and let it cook for 20 minutes, stirring occasionally.
