A delicious and healthy gluten-free snack or side dish made with zucchini and Parmesan cheese.

Ingredients

  • 2 medium zucchinis, sliced
  • 1 cup gluten-free breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 large eggs, beaten
  • Olive oil spray

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix the gluten-free breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  3. Dip each zucchini slice into the beaten eggs, then coat with the breadcrumb mixture.
  4. Place the coated zucchini slices on a baking sheet lined with parchment paper.
  5. Spray the zucchini slices lightly with olive oil.
  6. Bake for 20-25 minutes or until golden brown and crispy.
  7. Serve warm and enjoy!

Notes

  • For extra flavor, add Italian seasoning to the breadcrumb mixture.
  • Make sure to use gluten-free breadcrumbs to keep the recipe gluten-free.
  • These can be served with marinara sauce for dipping.
