A delicious and creamy dip perfect for parties, made with corn and a blend of spices, all gluten-free.

Ingredients

  • 2 cups corn (fresh or canned)
  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup diced red onion
  • 1/4 cup diced bell pepper
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the cream cheese and sour cream until smooth.
  2. Add the corn, cheddar cheese, red onion, bell pepper, lime juice, chili powder, salt, and pepper.
  3. Mix all ingredients until well combined.
  4. Transfer the mixture to a serving dish and refrigerate for at least 30 minutes before serving.
  5. Serve with gluten-free tortilla chips or fresh vegetables.

Notes

  • For a spicier dip, add diced jalapeños.
  • This dip can be made a day in advance for better flavor.
