- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the almond flour, coconut flour, sugar, brown sugar, baking powder, baking soda, and salt.
- In another bowl, cream the softened butter, then add the eggs and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
- If desired, fold in the chopped nuts.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are golden.
- Let cool before serving.
