Delicious gluten-free coffee cake cookies perfect for spring desserts.

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the almond flour, coconut flour, sugar, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, cream the softened butter, then add the eggs and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
  5. If desired, fold in the chopped nuts.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are golden.
  8. Let cool before serving.
