- 1/2 cup coconut flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk (or dairy-free alternative)
- 1/4 cup melted butter (or dairy-free alternative)
- 2 large eggs
- 1 tablespoon vanilla extract
- 1/2 cup brown sugar
- 2 tablespoons ground cinnamon
- 1/4 cup raisins (optional)
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the gluten-free all-purpose flour, coconut flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, melted butter, eggs, and vanilla extract.
- Combine the wet and dry ingredients until a dough forms.
- Roll out the dough on a floured surface into a rectangle.
- Spread the brown sugar and cinnamon mixture over the dough, and sprinkle with raisins if desired.
- Roll the dough tightly into a log and slice into rolls.
