Gluten-Free Cinnamon Rolls

Deliciously soft gluten-free cinnamon rolls that everyone can enjoy.

Ingredients

  • 2 cups gluten-free all-purpose flour
  • 1/2 cup coconut flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk (or dairy-free alternative)
  • 1/4 cup melted butter (or dairy-free alternative)
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the gluten-free all-purpose flour, coconut flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, melted butter, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients until a dough forms.
  5. Roll out the dough on a floured surface into a rectangle.
  6. Spread the brown sugar and cinnamon mixture over the dough, and sprinkle with raisins if desired.
  7. Roll the dough tightly into a log and slice into rolls.
  8. Place the rolls in a greased baking dish and bake for 25-30 minutes or until golden brown.
  9. Let cool slightly before serving.

Notes

  • For a dairy-free version, use almond milk and coconut oil.
  • These rolls can be frozen before baking for later use.
  • Adjust the sweetness by adding more or less sugar to the filling.
