Delicious and creamy cheesecake bars with a churro twist, perfect for gluten-free dessert lovers.

Ingredients

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 8 oz cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, mix the gluten-free flour, melted butter, granulated sugar, brown sugar, cinnamon, and salt until combined.
  3. Press the mixture into the bottom of the prepared baking dish to form the crust.
  4. In another bowl, beat the cream cheese until smooth, then add the eggs, vanilla extract, and powdered sugar, mixing until well combined.
  5. Pour the cheesecake mixture over the crust in the baking dish.
  6. Bake for 25-30 minutes or until the cheesecake is set and slightly golden on top.
  7. Allow to cool before slicing into bars and serving.

Notes

  • For extra flavor, sprinkle additional cinnamon on top before serving.
  • Store leftovers in the refrigerator for up to 3 days.
