These gluten-free Christmas cookies are tender, buttery, and perfect for decorating. A versatile dough that’s easy to make and holds its shape beautifully — even better when made with a hint of almond extract.

Ingredients

Scale
  • 2 ½ cups gluten-free all-purpose flour (with xanthan gum if not included)
  • 1 tsp baking powder
  • ½ tsp fine sea salt
  • ½ cup unsalted butter, softened
  • ½ cup coconut oil or dairy-free margarine
  • 1 cup granulated sugar
  • 1 large egg + 1 yolk
  • 2 tsp pure vanilla extract
  • Optional: ½ tsp almond extract

Instructions

  1. Whisk together flour, baking powder, and salt.
  2. Cream butter, coconut oil, and sugar until light and fluffy.
  3. Add egg, yolk, and extracts; beat until smooth.
  4. Gradually add dry ingredients until a dough forms.
  5. Wrap and chill dough for at least 1 hour.
  6. Roll out on floured surface, cut shapes.
  7. Bake at 350°F (175°C) for 8–10 minutes.
  8. Cool completely before decorating.

Notes

🎄 Pro Tip: Use parchment for easy cleanup. For sugar-free versions, substitute granulated sugar with stevia, monk fruit, erythritol, or allulose. Avoid honey or maple syrup.
