A delicious and easy gluten-free chicken parmesan recipe perfect for spring dinners.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup gluten-free breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a shallow bowl, whisk the eggs and season with salt and pepper.
  3. In another bowl, combine gluten-free breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning.
  4. Dip each chicken breast in the egg mixture, then coat with the breadcrumb mixture.
  5. Place the coated chicken breasts on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes or until the chicken is cooked through and golden brown.
  7. Remove from the oven and top each chicken breast with marinara sauce and mozzarella cheese.
  8. Return to the oven and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
  9. Garnish with fresh basil before serving.
