- Preheat the oven to 375°F (190°C).
- In a shallow bowl, whisk the eggs and season with salt and pepper.
- In another bowl, combine gluten-free breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning.
- Dip each chicken breast in the egg mixture, then coat with the breadcrumb mixture.
- Place the coated chicken breasts on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes or until the chicken is cooked through and golden brown.
- Remove from the oven and top each chicken breast with marinara sauce and mozzarella cheese.
- Return to the oven and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
- Garnish with fresh basil before serving.
