A delicious and crispy gluten-free version of the classic chicken parmesan, perfect for those with dietary restrictions.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup gluten-free breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 eggs
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a bowl, beat the eggs and set aside.
  4. In another bowl, mix the gluten-free breadcrumbs and grated Parmesan cheese.
  5. Dip each chicken breast in the egg, then coat with the breadcrumb mixture.
  6. Heat olive oil in a skillet over medium heat and fry the chicken until golden brown on both sides.
  7. Transfer the chicken to a baking dish, top with marinara sauce and mozzarella cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly.

  • For extra flavor, add Italian herbs to the breadcrumb mixture.
