  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the gluten-free pasta according to package instructions; drain and set aside.
  2. In a blender, combine soaked cashews and vegetable broth; blend until smooth and creamy.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add diced chicken and Cajun seasoning; cook until chicken is browned and cooked through.
