A delicious and healthy appetizer made with carrots and cheese, perfect for gluten-free diets.

Ingredients

  • 2 cups grated carrots
  • 1 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup chopped walnuts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the grated carrots, cream cheese, cheddar cheese, green onions, walnuts, garlic powder, onion powder, salt, and pepper.
  2. Mix until all ingredients are well combined.
  3. Shape the mixture into a ball and wrap it in plastic wrap.
  4. Refrigerate for at least 2 hours to firm up.
  5. Serve with gluten-free crackers or vegetable sticks.
