Delicious gluten-free brownie cookies perfect for spring desserts.

Ingredients

  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup dark chocolate chips
  • 2 large eggs
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, cocoa powder, sugar, brown sugar, baking powder, and salt.
  3. In another bowl, whisk together the eggs, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Fold in the dark chocolate chips.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are set.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
