Delicious, healthy, and easy to make gluten free muffins perfect for breakfast or a snack.

Ingredients

  • 2 ripe bananas
  • 1 cup gluten free oats
  • 1/2 cup almond milk
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the almond milk, honey (or maple syrup), melted coconut oil, and vanilla extract to the mashed bananas and mix well.
  4. In another bowl, combine the gluten free oats, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

  • These muffins can be frozen for up to 3 months.
