A delicious and moist apple cake made with almond flour, perfect for those following a gluten-free diet.

  • 2 cups almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 3 large eggs
  • 2 cups apples, peeled and diced
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, mix together the almond flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the honey (or maple syrup), melted coconut oil, and eggs until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the diced apples, cinnamon, and vanilla extract.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
