  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup molasses
  • Cream cheese frosting (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine flour, baking soda, baking powder, spices, and salt in a bowl.
  3. Cream together the butter, brown sugar, and granulated sugar in a separate bowl.
  4. Beat in the egg, vanilla, and molasses until well combined.
  5. Gradually mix in the dry ingredients until just combined.
  6. Drop spoonfuls of dough onto a lined baking sheet.
  7. Bake for 8-10 minutes or until edges are set.
  8. Spread cream cheese frosting on the flat side of one cookie and sandwich it with another.

Notes
