  • 1 teaspoon of smoked paprika
  • Salt and pepper to taste
  • 4 large eggs
  • Fresh parsley, chopped for garnish
  • Crusty bread for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 2 minutes.
  3. Stir in the smoked paprika and cook for another minute.
  4. Pour in the broth and bring to a simmer.
  5. Season with salt and pepper.
  6. Crack the eggs into the soup, cover, and let them poach for about 3-4 minutes.
  7. Serve hot, garnished with fresh parsley and accompanied by crusty bread.
