Garlic Butter Chicken Bites with Asparagus

A comforting and flavorful dish featuring tender chicken bites bathed in rich garlic butter and served with crisp asparagus.

Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 bunch asparagus (about 1 lb), trimmed and cut into 2-inch pieces
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • ½ tsp paprika (optional)
  • ½ tsp Italian seasoning (optional)
  • Salt and black pepper, to taste
  • Juice of ½ lemon (optional)
  • 1 tbsp chopped parsley, for garnish

Instructions

  1. Prep ingredients: Cut chicken into bite-size cubes and chop asparagus.
  2. Season chicken: Toss chicken with salt, pepper, paprika, and Italian seasoning.
  3. Heat oil and butter: In a large skillet over medium-high heat, heat 1 tbsp olive oil and 1 tbsp butter.
  4. Sear chicken: Add half of the chicken and sear for 2–3 minutes per side until golden and cooked through. Remove and repeat with remaining chicken.
  5. Cook asparagus: Melt 1 tbsp butter in the same skillet, add asparagus, and sauté for 3–4 minutes until bright green and tender-crisp. Season with salt and pepper.
  6. Combine: Push asparagus to the side, add remaining butter and garlic, cooking for 30 seconds until fragrant. Return chicken to skillet and toss with asparagus.
  7. Finish: Squeeze lemon juice over the top, sprinkle with parsley, and serve warm.

Notes

For a different twist, substitute asparagus with green beans, broccoli, or bell peppers.
