A delicious and heartwarming Fruit Layer Cake with rich strawberry buttercream, perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup strawberries, pureed
  • 1 cup strawberry buttercream frosting
  • Fresh fruits for decoration

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the butter and sugar until light and fluffy in a large bowl.
  3. Add in the eggs one at a time, beating well after each addition.
  4. Mix in the vanilla extract.
  5. Combine the flour, baking powder, and salt in a separate bowl. Gradually add the dry ingredients to the creamed mixture, alternating with the milk until just combined.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  9. Once cooled, place one layer of cake on a serving plate and spread a layer of strawberry buttercream frosting on top.
  10. Top with the second layer of cake and frost the top and sides.
  11. Decorate with fresh fruits before serving.
