Fried Sweet Plantains

A delightful, quick treat of caramelized plantains that bring warmth and joy to any meal.

Ingredients

  • 3 large plantains (peeled & sliced on a bias)
  • 1/2 cup vegetable oil (or any neutral oil)
  • 1/2 teaspoon Creole Cajun Seasoning (or seasoned salt, adobo, old bay)
  • 1/2 teaspoon packed brown sugar

Instructions

  1. Slice the plantains on a bias, at an angle, about 1/2-inch thick.
  2. Heat the oil in a large non-stick skillet over medium heat.
  3. Add the plantain slices in batches once hot.
  4. Fry the plantains for 2-3 minutes on each side until golden brown and slightly crisp. If browning too quickly, reduce the heat to medium-low.
  5. Set the fried plantains onto a paper towel-lined plate to absorb excess oil.
  6. Season if desired.
  7. Serve immediately as a snack or alongside main dishes.
