Ingredients

  • 24 medium oysters, freshly shucked and thoroughly drained
  • 120 ml buttermilk (or whole milk mixed with 1 tsp lemon juice)
  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper
  • 60 g all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 large eggs, lightly beaten
  • 1 tbsp hot sauce (e.g., Tabasco or Frank’s RedHot)
  • 60 g Panko breadcrumbs
  • 60 g fine yellow cornmeal
  • 1 tbsp Old Bay seasoning
  • 1 tsp smoked paprika
  • 950 ml – 1.2 L neutral oil with a high smoke point (e.g., vegetable oil, rapeseed/canola oil, or refined peanut oil)

Instructions

  1. Drain the oysters: Rinse shucked oysters under cold water and let them drain thoroughly for at least 5 minutes. Pat lightly with a paper towel.
  2. Brine: Place oysters in a bowl with buttermilk, salt, and pepper. Toss gently and let sit for 5–10 minutes.
  3. Prepare the bowls: Set up three shallow dishes: Bowl 1 with flour, salt, and pepper; Bowl 2 with eggs and hot sauce; Bowl 3 with Panko, cornmeal, Old Bay, and smoked paprika.
  4. The three-step dance: Dredge oysters lightly in Bowl 1, dip in Bowl 2, then coat in Bowl 3.
  5. Chill: Place oysters on a wire cooling rack and refrigerate for at least 15 minutes.
  6. Heat the oil: Heat oil in a deep pan over medium-high heat until it reaches 185°C (365°F).
  7. Fry in batches: Carefully drop 5–6 oysters into the hot oil and fry for 60–90 seconds until golden brown.
  8. Drain and season: Remove oysters with a slotted spoon and place on a wire rack, sprinkling with a pinch of salt.
  9. Serve: Serve immediately while hot, ideally with Lemon-Dill Tartare Sauce.

Notes

For people with diabetes, consider using sugar-free alternatives for accompanying sauces. Avoid using honey or maple syrup as substitutes.
