  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tablespoon espresso or strong coffee
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Chocolate-covered coffee beans (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, sugar, and brown sugar until light and fluffy.
  3. Beat in the egg, espresso, and vanilla until well combined.
  4. Whisk together the flour, cocoa powder, baking powder, and salt in another bowl. Gradually add this dry mixture to the wet mixture, mixing until just combined.
  5. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart. Press a chocolate-covered coffee bean into the center of each cookie.
  6. Bake for 10-12 minutes, or until the cookies are set but still soft in the middle. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
