  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tablespoon espresso powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, cocoa powder, baking powder, and salt in a bowl.
  3. Cream the softened butter, brown sugar, and granulated sugar in another bowl until light and fluffy.
  4. Beat in the egg, espresso powder, and vanilla extract until well incorporated.
  5. Gradually mix in the dry ingredients until just combined.
  6. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes until the edges are set.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
