Deliciously soft and fluffy homemade English muffins, perfect for breakfast or brunch.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1 cup warm milk (about 110°F)
  • 2 tablespoons melted butter
  • Cornmeal (for dusting)
  • Oil (for cooking)

Instructions

  1. Combine the all-purpose flour, whole wheat flour, sugar, salt, and instant yeast in a mixing bowl.
  2. Add the warm milk and melted butter to the dry ingredients and mix until a dough forms.
  3. Knead the dough for about 5-10 minutes until smooth.
  4. Place the dough in a greased bowl, cover with a cloth, and let rise in a warm place until doubled in size (about 60 minutes).
  5. After rising, divide the dough into equal pieces and shape them into rounds.
  6. Dust a baking sheet with cornmeal and place the rounds on it.
  7. Cover and let rise again for about 30 minutes.
  8. Preheat a griddle or skillet over medium heat and lightly oil it.
  9. Cook the muffins for 7-10 minutes on each side, until golden brown and cooked through.
  10. Cool on a wire rack before slicing and serving.

Notes

Use warm milk around 110°F to activate the yeast properly. Don’t skip the kneading and rising processes for the best texture.
