Delicious and nutritious mini quiches made with eggs, cheese, spinach, and bell peppers—perfect for busy mornings or leisurely brunches.

  • 1 cup Spinach, chopped
  • 1 cup Bell peppers, diced
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together eggs, salt, and pepper in a bowl.
  3. Stir in chopped spinach, diced bell peppers, and cheese.
  4. Pour the mixture into a greased muffin tin, filling each cup about halfway.
  5. Bake for 20-25 minutes or until the eggs are set.
