Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 cup shredded chicken
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a baking dish with cooking spray or a bit of butter.
  3. Combine flour, baking powder, and salt in a bowl.
  4. Whisk together the milk and melted butter in a separate bowl until well blended.
  5. Pour the wet mixture into the dry ingredients.
  6. Stir until just combined—do not overmix.
  7. Mix shredded chicken, mixed vegetables, chicken broth, garlic powder, onion powder, and parsley in another bowl.
  8. Spoon the chicken mixture into the bottom of the greased baking dish.
  9. Drop spoonfuls of the dough mixture on top of the chicken filling.
  10. Bake for 25-30 minutes or until the top is golden brown.
  11. Allow to cool for 5 minutes before serving.
