Irresistible Dulce de Leche Sandwich Cookies, also known as Alfajores, combine buttery cookies with creamy dulce de leche for a sweet taste of Latin American culture.

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 teaspoon salt
  • 1 cup dulce de leche

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter and powdered sugar together until light and fluffy. Add in the vanilla extract.
  3. Mix in another bowl the all-purpose flour, cornstarch, and salt together. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  4. Take small amounts of dough and roll them into balls, then flatten them slightly. Place on a baking sheet lined with parchment paper.
  5. Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool completely.
  6. Spread a layer of dulce de leche on the bottom of one cookie and top with another cookie, creating a sandwich.

Notes

For a neater look, use a piping bag to spread the dulce de leche. You can also roll the edges in shredded coconut or sprinkle with powdered sugar before serving.
