A delicious blend of creamy pasta salad infused with the tangy crunch of pickles and smoky bacon, perfect for summer gatherings.

  • 1 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1/4 cup Pickle Brine
  • 1 tablespoon Yellow Mustard
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Sugar
  • 8 slices Bacon
  • 8 ounces Short Pasta
  • 1 cup Pickles
  • 1 cup Mini Cucumbers
  • 1 cup Mild Cheese
  • 1/2 cup Red Onions
  • 1/4 cup Fresh Dill
  • to taste Salt and Pepper

Instructions

  1. Cook 8 ounces of short pasta according to package instructions until al dente. Drain and set aside to cool.
  2. Fry 8 slices of bacon in a skillet over medium heat until crispy. Remove and place on paper towels to drain excess grease. Once cooled, chop into bite-sized pieces.
  3. Whisk 1 cup mayonnaise, 1/2 cup sour cream, 1/4 cup pickle brine, 1 tablespoon yellow mustard, 1 teaspoon kosher salt, and 1 teaspoon sugar in a large bowl until smooth.
  4. Add the cooled pasta to the bowl along with chopped bacon, 1 cup pickles, 1 cup mini cucumbers, 1 cup mild cheese, 1/2 cup red onions, and 1/4 cup fresh dill.
  5. Stir gently to combine all ingredients, ensuring everything is coated in the creamy dressing.
  6. Season with salt and pepper to taste. Adjust as needed.
  7. Chill the salad in the refrigerator for at least 1 hour before serving to allow flavors to meld.
  8. Serve chilled and enjoy the refreshing crunch and rich flavors that define this dish.

Notes

For a lighter option, turkey bacon can be used, but it may not provide the same smoky flavor. This salad is best made ahead of time to allow flavors to meld.
