  • 8 large Yukon Gold potatoes
  • 2 cups double cream
  • 2 cups full-fat milk
  • 1 tablespoon garlic, minced
  • 2 sprigs fresh thyme
  • Salt and pepper, to taste
  • 1 cup vegetarian cheddar cheese, sprinkled generously

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a baking dish with butter.
  3. Peel and thinly slice the potatoes, about 1/8 inch thick.
  4. Mince the garlic finely.
  5. Combine double cream and full-fat milk in a mixing bowl.
  6. Add minced garlic, salt, and pepper to the cream mixture.
  7. Layer half of the potatoes into the greased baking dish, sprinkle with half of the thyme and cheese.
  8. Pour half of the cream mixture over the potatoes.
  9. Repeat layering with remaining potatoes, thyme, and cheese.
  10. Pour the rest of the cream mixture on top.
  11. Cover with aluminum foil and bake for 45 minutes.
  12. Remove foil and bake for an additional 30 minutes until golden and tender.
  13. Allow to rest for 10 minutes before serving.
