A flavorful Jamaican Curry Chicken recipe that combines spices and tender chicken, offering a taste of Caribbean heritage.

Ingredients

  • 3-4 lbs organic chicken, skin removed (drumsticks + thigh pieces work great!)
  • 1-2 tbsp browning, optional
  • 2-3 tbsp Jamaican Green Seasoning (or all-purpose seasoning)
  • 2 tbsp Jamaican curry powder
  • 2 tsp On Everything All-Purpose Blend
  • 1 tsp sea salt
  • ½ tsp smoked paprika
  • 4 tbsp extra virgin olive oil
  • 2 tbsp organic brown sugar
  • 1 (14 oz.) can full-fat coconut milk
  • 2 medium russet potatoes, peeled and cubed
  • 2 medium carrots, peeled and chopped
  • 1 medium bell pepper, cored and chopped
  • 3 garlic cloves, minced
  • 2 tsp minced fresh ginger (or ½ tsp ground ginger)
  • 1-3 scotch bonnet peppers (adjust for spiciness)
  • 2 green onions, lightly crushed or chopped

Instructions

  1. Combine chicken in a bowl with browning, Jamaican Green Seasoning, curry powder, On Everything Blend, sea salt, and smoked paprika. Mix well.
  2. Heat olive oil in a large pot over medium heat.
  3. Add chicken and brown on all sides.
  4. Add garlic and ginger, sautéing until fragrant.
  5. Stir in potatoes, carrots, bell pepper, brown sugar, and coconut milk. Mix well.
  6. Add scotch bonnet peppers and green onions. Bring to a simmer.
  7. Cover and cook on low heat for 30-40 minutes, stirring occasionally until chicken is tender.
  8. Taste and adjust seasoning as needed.

Notes

Serve with rice or warm crusty bread to soak up the delicious sauce.
