Ingredients

  • 1 lb beef sirloin or flank steak
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/2 cup soy sauce
  • 1/4 cup beef broth
  • 1 tablespoon cornstarch
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Cut the beef into thin slices and season with salt and pepper.
  2. Heat olive oil in a pan over medium-high heat. Sear the beef until browned on both sides.
  3. In a slow cooker, combine the seared beef, bell peppers, onion, garlic, ginger, soy sauce, and beef broth.
  4. Cook on low for 360 minutes or on high for 240 minutes until the beef is tender.
  5. In the last 30 minutes of cooking, mix cornstarch with a little water and add to the slow cooker to thicken the sauce.
  6. Serve hot over rice or noodles.
