A rich and creamy vegan soup featuring gnocchi, inspired by the beloved Olive Garden recipe.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent.
  3. Stir in the minced garlic and cook for another minute.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Add the coconut milk and gnocchi, cooking until the gnocchi float to the top.
  6. Stir in the fresh spinach and Italian seasoning, cooking until the spinach wilts.
  7. Season with salt and pepper to taste before serving.

Notes

  • For a thicker soup, blend a portion of the soup and return it to the pot.
  • Feel free to add other vegetables like carrots or mushrooms for extra flavor.
