  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the black beans, corn, diced tomatoes, and taco seasoning.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Reduce heat and let it simmer for 15 minutes.
  6. Stir in the heavy cream and shredded cheese until melted and combined.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with your favorite toppings.

Notes

  • For a spicier soup, add jalapeños or hot sauce.
