  • 1 lb chicken breast, diced
  • 2 cups cauliflower florets
  • 1 cup almond milk
  • 2 tbsp nutritional yeast
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the gluten-free pasta according to package instructions; drain and set aside.
  2. In a large pot, heat olive oil over medium heat and add the diced chicken. Cook until browned and cooked through.
  3. Add minced garlic and sauté for 1-2 minutes until fragrant.
  4. In a separate pot, steam the cauliflower florets until tender, about 10 minutes.
  5. Transfer the steamed cauliflower to a blender, add almond milk, nutritional yeast, salt, and pepper. Blend until smooth and creamy.
  6. Pour the cauliflower sauce over the cooked chicken and stir to combine.
