  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg

Instructions

  1. Wash and drain the spinach, then chop it coarsely.
  2. Melt the butter in a large skillet over medium heat.
  3. Add the flour and whisk for about 1 minute to create a roux.
