A hearty and comforting casserole filled with ground beef, beans, corn, and topped with gooey cheese.

Ingredients

  • 1 lb ground beef
  • 1 can kidney beans, drained
  • 1 can corn, drained
  • 3 medium potatoes, diced
  • 1 onion, chopped
  • 1 cup shredded cheese
  • 1 cup beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef over medium heat in a skillet. Drain excess fat and add the onion, cooking until softened.
  2. Combine the beef, kidney beans, corn, diced potatoes, beef broth, garlic powder, chili powder, salt, and pepper in a slow cooker.
  3. Stir everything to combine.
  4. Cover and cook on low for 6-8 hours, or high for 3-4 hours.
  5. Sprinkle shredded cheese on top once cooked and let it melt before serving.

Notes

Use lean ground beef for a healthier option; customize your casserole by adding your favorite vegetables.
