Delightful treats made of warm, gooey cookies hugging a scoop of creamy ice cream, perfect for any occasion.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips or sprinkles
  • 2 cups ice cream (flavor of your choice)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter, granulated sugar, and brown sugar in a large bowl until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Mix together the flour, baking soda, and salt in another bowl. Gradually blend the dry ingredients into the wet mixture.
  5. Fold in the chocolate chips or sprinkles.
  6. Drop spoonfuls of dough onto baking sheets lined with parchment paper, spacing them apart.
  7. Bake for 10-12 minutes or until the edges are golden.
  8. Allow the cookies to cool completely on a wire rack.
  9. Scoop ice cream onto the flat side of one cookie, sandwich it with another cookie, and gently press together.
  10. Wrap each sandwich in plastic wrap and freeze until firm.

Notes

Chill the dough for thicker cookies; don’t overbake for a soft texture.
