A hearty Chorizo Potato Soup that combines smoky chorizo, earthy potatoes, and a creamy broth, perfect for cozy gatherings.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 ounces chorizo, casing removed and crumbled
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat a large pot over medium heat and add the olive oil.
  2. Add the diced onion and cook until soft, about 5 minutes.
  3. Incorporate the minced garlic and chorizo, cooking until the chorizo is browned.
  4. Stir in the diced potatoes, broth, salt, and pepper. Bring to a boil.
  5. Reduce the heat and let simmer until the potatoes are tender, about 15-20 minutes.
  6. Stir in the heavy cream and heat through.
  7. Garnish with fresh parsley before serving.

Notes

For a lighter version, turkey chorizo can be used. Store leftovers in an airtight container for up to 4 days.
