Delicious and wholesome Chocolate Oat Bars, perfect as a snack, dessert, or quick breakfast.

  • 2 cups rolled oats
  • 1 cup almond flour (or whole wheat flour)
  • 1/2 cup coconut sugar (or brown sugar)
  • 1/4 teaspoon salt
  • 1/3 cup coconut oil (melted)
  • 1/4 cup maple syrup (or honey)
  • 3/4 cup dark chocolate chips (or milk chocolate for a sweeter option)
  • 1/4 cup almond milk (or any milk of choice)
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper for easy removal.
  2. Combine the rolled oats, almond flour, coconut sugar, and salt in a large mixing bowl, mixing well to combine.
  3. In a separate bowl, mix the melted coconut oil, maple syrup, almond milk, and chocolate chips until combined.
  4. Pour the wet mixture into the dry ingredients and stir until evenly combined.
  5. Press the mixture firmly into the prepared baking dish, spreading it out evenly.
  6. Bake in the preheated oven for 20-25 minutes, or until lightly golden.
  7. Melt additional chocolate chips in a small saucepan or microwave, then drizzle over the baked bars.
  8. Chill in the refrigerator for at least an hour before cutting into squares.

Notes

For sugar-free options, consider using stevia, monk fruit, or allulose. Store bars in an airtight container for up to one week in the fridge.
