  1. Wash the cherries thoroughly under cool water, ensuring no residual dirt remains.
  2. Pat the cherries dry with a paper towel, taking care not to remove any of the stems.
  3. Melt the dark chocolate in a microwave-safe bowl. Start with 30 seconds of heating and stir.
  4. Continue microwaving in 10-second intervals until the chocolate is completely melted and smooth.
  5. Stir in the coconut oil if using, ensuring the mixture is glossy and well combined.
  6. Dip each cherry into the melted chocolate, holding it by the stem.
  7. Twist the cherry slightly to shake off excess chocolate to create a smooth coating.
  8. Place the dipped cherry on a parchment-lined baking sheet.
