A creamy and spiced vegetarian dish featuring chickpeas simmered in a luscious coconut milk and tomato sauce.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 can coconut milk
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tomatoes, diced
  • 2 tablespoons tikka masala spice blend
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Sauté the onion, garlic, and ginger until translucent.
  2. Add the diced tomatoes and cook until softened.
  3. Stir in the tikka masala spice blend and cook for another minute.
  4. Add the chickpeas and coconut milk, bring to a simmer.
  5. Cook for 15-20 minutes, stirring occasionally until thickened.
  6. Season with salt to taste and garnish with fresh cilantro before serving.
