A vibrant twist on the classic Caesar salad, these Chickpea Caesar Wraps combine creamy dressing, fresh greens, and hearty chickpeas for a satisfying meal.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons vegan mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon Worcestershire sauce
  • 2 cups chopped romaine lettuce
  • 1/4 cup grated vegan Parmesan cheese
  • Salt and pepper to taste
  • 4 whole grain wraps or tortillas
  • Optional: cherry tomatoes, for garnish

Instructions

  1. Mash the chickpeas with a fork or potato masher until slightly chunky.
  2. Stir in the vegan mayonnaise, Dijon mustard, lemon juice, Worcestershire sauce, and mix well.
  3. Season with salt and pepper to taste.
  4. Lay out the wraps and fill each with the chickpea mixture, chopped romaine, and vegan Parmesan.
  5. Roll the wraps tightly, slice in half if desired, and serve with cherry tomatoes on the side.
